
3D technology in cooking: where and how are already applied

3DS Culinary Lab
3D Systems is the first innovative culinary center in the world of 3D printing, located on the corner of Melrose and Highland, the epicenter of the culinary community of Los Angeles.
The 3DS culinary laboratory opened this summer and has become a space for cooperative learning, collaboration and research - a place where the industry can experience ChefJet Pro (a professional food printer) and where chefs, mixologists and culinary innovators can experiment with a combination of traditional culinary craft and 3D print . This innovation center will also often host events for leaders in the hospitality industry, meetings of culinary communities, as well as symposia and master classes that will explore and shape the range of dishes,printed on a 3D printer .
Duff Goldman, Charm City Cakes
Chef Duff Goldman's Ace of Cakes is an original reality cooking cake show. Duff can still be seen on his new Duff Till Dawn show and as a host at Sugar High. By the time Duff first got into the 3DS Culinary Lab, he already had experience 3D scanning brides and grooms for his cakes! Together we decided to develop a multi-tier cake that would look like a traditional wedding cake. Clear geometric patterns adorn each tier, giving a completely unique look to the culinary masterpiece:


Matthew Biancanello, Eat Your Drink
Matthew Biancanello, known in the industry as a cocktail specialist and former mixologist for the Liberty Bar at Roosevelt Hotel, will release his first cookbook, Eat Your Drink, this fall. As for the composition of drinks, which is highly dependent on the seasonal market and local ingredients, Matthew's cocktail creations rely heavily on savory. To test 3D Systems, he decided to create a cocktail that would fancyly combine the aromas of dried mushrooms from the camphor camphor, bergamot and chamomile with tequila, kiwi and freshly squeezed lemon juice. As a result of 3D printing, we got a vase in the shape of an acorn with miniature daisy flowers and twigs at the edges:





Mei Lin
Winner of the 12th season of the Top Chef reality show on Bravo, Mei Lin, in partnership with 3D Systems, was to create a 3D printing component to create a sophisticated dessert based entirely on Hawaiian flavors and inspired by the beauty of the passion fruit flower.
The dish consisted of passion fruit pulp, caramelized English banana cream, cooled to ice cream consistency with liquid nitrogen, freeze-dried strawberry powder, bee pollen, yogurt and chopped fresh bananas and strawberries. A thin perforated 3D-printed interpretation of the passion fruit flower, flavored with the fruit itself, topped each serving. May invited the guests to destroy the fragile passion fruit flower with spoons to combine taste and texture in each bite.










Josiah Citrine, Mélisse Restaurant
The chef and co-owner of Mélisse, a 2-star restaurant (according to the Michelin guide) in Santa Monica, Josiah Citrine and chef Ken Takayama in partnership with 3D Systems were supposed to create a snack. Chef Citrin was particularly interested in adding a certain flavor to the dish, and in an unexpected way they decided to create an innovative version of the classic dish - French onion soup.
3D printing was tested on a traditional component - croutons, which were printed using aromatic onion powder. Chef Citrin combined a small bundle of onion and burrata cheese with printed croutons and decorated everything with flowers of the pan and onions in batter. To this was added the oxtail broth, which turned the rich beef consom into an incredible interpretation of the classic French onion soup.





Culinary Institute of America
The Culinary Institute of America (CIA), the country's leading culinary educational institution, is to partner with 3D Systems to explore the intersection of 3D printed food and traditional craft cooking methods. Starting with the creation of a 3D food research lab on their Hyde Park campus using the ChefJet Pro 3D food printer, the partnership will also include a series of conferences and workshops for the KIA community, as well as fellowships and internships at the 3DS Culinary Lab in Los Angeles.



Modernist cuisine
3D Systems was honored to collaborate with modernist cuisine by working to create the final course in a 50-course dinner for Ferran Adria in Spain. This last meal consisted of serving absinthe with sugar slices printed on a 3D printer and special 3D printed ceramic spoons. Thanks to the Spanish roots of chef Adria, the traditional sugar cube is transformed into bizarre colorful structures resembling the Gaudi pipes in Barcelona. Fancy absinthe ceramic spoons have also been designed specifically for this occasion. Printed on a 3D printer, each spoon has tines that perfectly adhere to the geometry of the delicate sugar, holding it during serving.
